This fun and easy recipe makes a wonderful Thanksgiving gift and can be put in a pretty box wrapped with a bow so that it can be easily given out to fellow dog lovers. Pay it forward with these peanut delights.
3 ½ cups of rice flour
1 teas. ground cinnamon
½ teas. baking powder
¼ cup honey
¼ cup unsalted peanut butter
½ cup canola oil
1 teas. pure vanilla extract
½ cup chopped unsalted peanuts
Preheat the oven to 325 degrees.
Grease a jelly roll pan with nonstick vegetable spray.
Stir together the rice flour, cinnamon and baking powder in a bowl and set aside.
In a large bowl, whisk together the egg, honey, peanut butter, oil and vanilla.
Add the dry ingredients to the wet ingredients and add 1 cup water.
Stir to form a stiff batter.
Turn the dough out on the jelly roll pan.
Cover the dough with plastic wrap. With a rolling pin, roll the dough out evenly to ¼ inch thickness. Remove the plastic wrap and sprinkle the dough with peanuts, pressing them into the dough. Score the dough with a knife into small squares.
Bake for 30 to 40 minutes until it starts to turn a golden brown.
These can be frozen up to 3 months.
